We Are

We kick off September with heavily smoke laden skies, an anniversary and lots of studying.


  • Girlie spends a lot of time at coffee shops studying - or drinking coffee.  She says studying.
  • Hubby and I celebrated 28 years of marriage.  It actually fell on our wedding day. . .how often does that happen?  To celebrate he fixed tires, bought tires and cleaned wheels.  I headed out, alone, in search of fall decor.  We did spend a bit of time together at WalMart where we picked up some Mums for the front porch.  While there I saw a Pioneer Woman display and found this platter.  Last year, he tried,  to get a similar platter (it was sold out everywhere, and eventually disappeared.)  So when I found this one, I had to get it, naturally.  It's huge.  I love it.
  • Smoke from Western fires is causing some interesting light here.
  • Fall. . .it's coming!
  • The smoke from Western-States' fires (and two from Colorado) was so heavy, you couldn't see the foothills, let alone a quarter mile down the road.
  • Back-to-School Night Mystery.  Find your child's desk based on the clues they left behind.  Clue #1 was, "I like Mustangs."  Found him!
  • When the teacher at back-to-school night finishes with, "Hopefully your kids are studying their states and capitals for the test tomorrow."  And you come home to find back-to-school child thinks the test is next week.
  • #welcometocramming
  • We have three drivers, five different places everyone needs to be and two cars.  Enter the really inexpensive car we purchased this week.  The new car is not only really inexpensive, it's a manual - all the kids know is automatic.  Brave hubby took all three, at the same time, to teach them.
  • Let the chiropractic appointments commence.
  • It's not easy learning to drive a manual, but when you add a peanut gallery that includes all your siblings, it's brutal.
  • After just a couple days things are much smoother
  • Coffe Shop and Girlie.  A love affair.
  • Working on Labor Day only has one benefit (besides the money). . .getting your APUSH done because everyone else is outside.
  • My final peach recipe for this season.  A pie.
  • The wildfire smoke makes some great sunrises. . .if nothing else.

Just Stick to Cross-Stitch


Last weekend, on Saturday, my boys headed for the mountains and some fishing and adventure (see this post for the adventure part.)  That left me, and Girlie, home alone.  

All.  Day.  

I had time to putz around and time to play.  And, I even had choices on what crafty notion to follow.  I have been cross stitching quilt squares before bed.  I have yet to decide what to do with said quilt squares since I'm not a quilter, nor am I much for sewing in general.


My first choice was doing a quick-gratification project by completing my 2016 December Daily album.  I had purchased, during a sale, a December Daily kit and 4x6 album from Ali Edwards.  They were clearancing out last year's selections.  Most of what I needed was right there - I may look for the odd, low profile embellishment, but all I needed to do was print my photos for this project.


My next choice was a home decor kit from Paisley and Polka Dots, that was a reward of sorts to myself. I have previously purchased a chipboard album kit from Paisley and Polka Dots that I used for a past December Daily.  Her kits are all-inclusive, except for adhesives.  


I also had the August layout from the Scrapbook and Cards Today 365 Class.  I haven't done a layout for the class since March - I'm okay with that, but it would be nice to do one.  Maybe another layout for the 8 y.o. whose pages completed just for him I could count on one hand.  Doing this would just require me grabbing a paper pack and photos, which I probably already had paired up.


So, after going over my options, I chose to undertake the home decor stuff.  It was something different, and I would be decorating for Fall soon.  This home decor kit, as I discovered, required a bit more outside the kit:  a couple different glues, ink, paint and some sort of sanding tool.  I had paint, but oddly not white.  I didn't have any of the glue.  I usually have a "crafting" emery board for sanding edges, but couldn't find it - add to the list of things to buy.  I had the ink.  Okay, so this would require a trip to WalMart to get the needed items and it was too hot at the time to get in the sweltering car and make the 10 minute drive.  Yes, I was beyond lazy.


Okay then.  On to my second choice.  2016 December Daily, which just needed photos.  So, I set up my printer, grabbed my photo paper and started selecting photos.  I knew what size the pocket pages were, a selection of 4x6 and 2x3's.  Unfortunately, all the 4x6 were horizontal.  Most of the photos I was using were vertical.  2x3's it is.  I'm cruising along, selecting, editing where necessary (I really do need to adjust my printer to my computer screen so that what I see is what prints) and printing.  I go flying along, until I hit Christmas Day and find that ALL my Christmas morning photos are missing.  I spend some time searching to see if my computer downloaded them on a "download date", instead of by "date taken." Nope.  They must still be on the stick in my big camera.  I use my point-and-shoot to download photos, but that's dead.  Looking at the above photo, I realize I could have just put the memory stick in the appropriate slot you can see on the printer, but then I'd still need to download the photos.  Off to charge the point-and-shoot's battery.

Screeching halt.  End day.  End scene.  Cross-stitch sounds pretty good.

Food for Thought

We are deep into the gluttony that is Peach Season in Colorado, where the long awaited Palisades Peaches make their way down here.  We gorge ourselves on them.  Seriously, we eat them fresh, they are in crisps and pies and ice cream, served up sliced as a side to most meals; they are breakfast.  Then, just as we can't possible eat another peach (let alone look at one), the season passes.  Hopefully I've put up peaches in some form to enjoy when we once again crave a peach, but alas the season is months away. . .this usually occurs when we are deep in the throws of winter.

This year I put up 10 pints of peach jam and five quarts of halved peaches.  I've got ice cream in the freezer, but that won't last, and neither will the peach sauce that goes with it - just mashed peaches and then reduced - no sugar needed.  I do, however, still have one 10 pound box coming, and we've already gone through over 42 pounds.


It wasn't completely about peaches.  I had six-plus pounds of tomatoes from our bushes to deal with.  And that's just the Roma's, the Grape Tomatoes we eat straight or have been in salads - I'm thinking of skewering them with fresh mozzarella later this week.  I've thought about canning diced tomatoes or just putting up marinara, so I looked for, and found, both a diced recipe and this Slow Cooker Marinara Sauce with Fresh Tomatoes recipe.  I opted to try the marinara first.  Super easy and simple to chop (no peeling necessary) and toss it all in the slow cooker, food mill it and toss it back in the slow cooker.  It did start to separate as I was ladling it into jars.  That is either, 1) the nature of homemade sauce, or 2) needing to be cooked down longer.  We are at altitude and I didn't make much of an adjustment in the second cook time, which I will do next time - letting it cook down longer.  The taste was good.  Almost as good as my go-to sauce - tomato-y, good balance of herbs.  My six pounds yielded two quarts, which are now in the freezer.


So yeah, Peaches.  I needed something that used up a fair amount of fresh peaches, but was easy to pull together as Summer has returned - blah!  Fresh Peach Crisp works well for both, even if I have to use the oven.  I used more than the called for four peaches - I had a 9x13, which is bigger than what was used in the original recipe, so I think I used six.  I also didn't peel them, and like to slice them a bit thicker so they hold up better in baking.  The topping was the best - it was crispy on top, thanks to the CUP AND A HALF of butter.  The oats stayed chewy, and didn't get slimy - even on day two.  Crisp has got to be one of the best ways to enjoy fresh, ripe peaches.


I like to alternate my canning recipes each year.  So last year I made Peach Butter.  The year prior I put up halves and made jam.  This year, it was time for more jam.  I made two small-batch recipes - 10 half pints in total.  A Peach Freezer Jam, which is just a basic jam, but good, and this Peach and Vanilla Bean Freezer Jam.  It was equally as easy, smelled great with that vanilla bean in there, but is thin.  The blogger warns ahead of time, that this is not a thick-spreading jam, it is a bit thicker than a glaze and is more pour-able than spreadable - just information to know ahead of time so when your jam isn't setting up, you know it's not supposed to.  I can't wait to empty the fridge of the current jam selections and give this one a try on fresh scones, or buttermilk biscuits.


I've done a few variations on canning peaches.  I've tried a medium syrup, sliced, heat peeled, no-heat peeling, halves, light syrup, raw pack.  My best results have come from light syrup, raw pack, halved, no-heat peeling.  While it is certainly much easier to peel them after blanching, I think the added heat on an already tender peach, makes the outside softer.  Then you process them and, while still good, they aren't as firm as I've found no-heat peeled peaches to be.  I used this guide to Canning Peaches, mostly for the syrup ratios, but there were some good tips, too; it is now my go-to reminder.  I use the light syrup, as our peaches are always plenty sweet.  I use a light touch and a hand apple peeler (I've also tried a pairing knife.) Does it take longer?  Yes, and it's no less messy, but I like the final product better.


It's been screaming hot, so anything on the stove I try to avoid, but this Italian Wonderpot sounded fast on a back-to-school night, so I went for it.  You toss everything in the pot, boil and serve.  How much easier can it get?  My 8.y.o. cooked this meal.  I'm not a fan of fettuccine noodles.  I think they get mushy on the outside while the inside is al dente.  I tend to sub in linguine noodles instead.  I didn't do that this time, but will next time and adjust/keep an eye on my cook time.  I'll also add more garlic, but that's because I like garlic.  The only other note is taste before serving, chances are it will need more salt.  I'd also add some fresh parsley to the top just to brighten it up.  It was a satisfying, quick meal.  It'll be great when there's a chill in the air.


Believe it or not there were still peaches, so I made Peach Ice Cream.  It has a creamy vanilla base (I used 2% milk instead of whole.)  I liked that the peaches were roasted, not that they needed to be sweeter, but it enhanced them.  I need to dice them smaller, if not puree some of them and dice the remainder.  It was good with vanilla graham crackers and peach sauce over top.

We Are

We are well into our second full week of school.  Schedules are settling.  Stress has hit its peak and is coming down.  School-schedule life is now the norm.


  • If you've read here for any length of time, my struggle with exercise of any kind is well documented.  I've tried lots of things - gym workouts, Pilates, walking and hate it all!  Hate.  It.  I've contemplated trying yoga for a long time and finally, after watching Ali Edwards' fitness journey on Instagram, decided to look into local studios.  I did a bit of research, picked a nearby studio and bought a five class pass.  So far, I've enjoyed it, as much as one can enjoy burning thighs, shaking arms, and folding oneself into a myriad of shapes in the name of healthy lifestyle.  But it's a no-judgement zone and modifications are made to accommodate your flexibility, or lack there of, so there's that.

  • The 18 y.o. went to help move his girlfriend into college, but enjoyed some great views while doing so.

Food for Thought

Ready for the weekend?  

It'll be quiet. . .or quieter around here.  Always is when you take one child out of the mix.  The 18 y.o. is with his girlfriend as she moves into school down at University of Northern Arizona.  It'll be a long ride back for him.

Hubby is thinking of going fishing and (hopefully) taking one or more of the remaining boys with him.

As for my daughter, I'm not sure.  She had shifted her schedule to weekends to accommodate going back to school, but I'm not sure the powers-that-be have provided her the requested hours.

If your weekend plans include prepping for the coming week and getting your menu down, then I can help with the following.


I'm still playing catch-up with all the un-posted meals.  That includes this Pink Lemonade Sheet Cake, which was awesome.  The moist vanilla base and the just-right lemon sweet/tartness of the icing. I think I'm becoming obsessed with sheet-pan anythings. . .there have been quite a few of them popping up here lately.


Hello!  It says "Snickers."  So the Snickers Slab Pie was a must do.  I was a touch worried it might be too sweet and/or heavy, but it was all just right.  A whipped peanut butter filling, topped with all things caramel and chocolate.  It was actually a really light dessert.  I used Snickers Bites (found in the baking aisle at my grocer), which I also chopped, rather than full-sized candy bars.


If you're gonna open with two desserts, it better get healthy quick.  And it does.  With another sheet pan recipe - Crispy Sheet Pan Lemon Parmesan Garlic Chicken and Veggies.  Now, a couple things, I doubled this recipe (it was Parents-for-Dinner night) and I barely had room on my sheet pans for the chicken, let along the veggies.  I'm not sure this can be a one-pan meal, and not just because of the amount of food required on a pan (doubled recipe or not) - read on.  In the end this was really good.  However, in reading through the recipe I wondered how the chicken would brown and crisp in a half-cup of butter.  And yeah, it didn't - the breading got soggy.  I ended up pouring off some of the juices and broiling the pans for a couple minutes before serving just to get crispier tops.  The veggies were great, crisp-tender and seasoned well.  I think in the future, even if I'm cooking for just the six of us, I'll do two pans, one for the chicken and the other for the veggies.  I will use a small amount of butter mix in the chicken pan (lined with parchment - things get crispier for me that way), but I think two pans is gonna have to be the way to go.  I suppose I could reduce the amount of butter, but there's just so much on one pan that I think the steam created only adds to the soggy breading issue.
  

I know it was hot when I planned this Poppy Seed Chicken and Grape Pasta Salad.  On hot days, even boiling pasta will ignite the inferno that is my kitchen in the summer, but this one was worth it. It was simple and easy to pull together.  The dressing was light and I love grapes in a chicken salad - those bright pops of summer.  It was a "feed yourself when you're ready" night and I had one child go out of his way to say how much he liked it.  Score!

If I'm lucky enough to be home alone this weekend, I'll need to find something crafty to do.  My soul is in need.

We Are

I thought it was a quiet road up to the start of school, until I started gathering photos.  We - or the kids at least - were busy sucking up the last of their breaks.


  • The 18 y.o. capped his summer with two more Fourteeners - Mt. Lincoln and Mt. Cameron.  One frosty climb early in the morning - and a glimpse that this freakin' heat will come to an end . . .
  • . . . the other much more comfortable, later on the same day.
  • The Girlie and her Kroo make a return to the state after a trip to Kansas #allthesameshirts
  • The 16 y.o.'s first day of school - bring on Junior Year.
  • The perk of being dragged with your parents to the Peach Festival is that one car sighting that will sustain you through the rest of the hot drag down the festival lanes.  #mustangobsessed
  • It was hot, but we collected our peaches, and peaches for several family members
  • I'm not sure the weather will cooperate and be cool during the long weekend of processing peaches - putting up some halves and making jam.  That's the plan anyway.
  • I need a five-day weekend
  • When your family decides to clean the carpets and leaves you no place to go
  • First Day of School for these two.  Still need a shot of the 16 y.o.
  • Eclipse Ready
  • Shots of our eclipse experiences.  We were all in different places, but it was exciting nonetheless.  We reached about 93% totality here in the Denver-metro area.  It was an odd filtered light, with no heat.  Weird, in a good way.
  • The media called it the Great American Eclipse.  So, there's a drink to go with that.  It wasn't bad. . .lots of tequila.
  • When the house is quiet, it's a love hate thing.  Nobody bothers you in your sun spot.  But nobody bothers you.
